He gives a voice to the fat lady but the 6 episode arc that follows this episode appears to be about a budding relationship with the foreign non-english speaking waif that brings him the pie in "Elevator". So, even though there is a connection with Vanessa, the thin girl wins again.
I'm thinking that line had less to do with Apple Computer than coming up with the 1969-70 iteration of the corporate speak, "low hanging fruit" we've all come to loathe.
