My method for ultimate hot chocolate is to use both cocoa and chocolate. Dissolve the cocoa in boiling water, add milk and sugar, then when it’s hot, add chopped chocolate. Cocoa gives intensity and chocolate gives body and smoothness.

(Also, using half and half instead of milk is the trick to the best rice pudding.)
