Since you need to fix the front end, have you thought about using the S13 Silvia front end? Or upgrading to a S14 or S15 front end? Years ago I saw a 240sx convertible with a S14 front end.

You left out the Caprice which is a WM chassis. The WM is an upgraded VE chassis that has been lengthened.

They are all on updated platforms of the V chassis developed by Opel in Germany, and then widened when sent to Australia. Same platform but upgraded.
You’re sorta wrong on parts. The GTO is the VT-VZ chassis, the G8 is the VE chassis, and the SS is the VF.
