Best trick I have is fried rice.  Make like normal, only at the end toss in broccoli slaw, and let it heat through.  It gets a similar texture to the rice.  Of course, I've also loaded in straw mushrooms, onions, peas, carrots, and bok choy, so they see those veg, don't notice the slaw much.
