About the drying time, Jacques has had some episodes where they were rinsed in a colander, shaken for a few jiggles, and then promptly cut.

If Jaques Pepin washes them before using them, then it’s ok. Alton Brown said that they don’t turn mushy nor lose flavor if you wash them right before cooking them.

I have an inflatable one that I keep about half inflated. I have the back part tilted up to support the base of skull and back of head. When the flight gets to altitude, I have to have a little air out.
