Dividers, simple pieces of cardboard work, but you can get fancy ones. Only need horizontal sections placed every 4-5 inches.

That croque monsieur does look good. I will have to try it, though I bet they do them better in France. Poaching the egg is ok I guess if you don't like the added butter from frying, but I still do mine over easy so I get the Ecstasy inducing warm egg yoke. (plus butter makes everything better!. Been doing this for years. I love circular forms for egg sammiches. I do substitute the ham for sausage though, they start round. Also Swiss cheese, which doesn't start round, but I like the nutty zing to it.
