That seems like a strange method to me. It's easiest to just drop your still sealed steak straight in to the water. Water is great at transferring heat via convection, but the weight of the pan isn't really doing anything. (Think about it, else the area under a boulder would permanently be super hot)

Nothing stopping you, just takes a bit of conviction is all. A bit of googling should find your local class.

That's sad to hear, have visited a few lindy communities in the UK and it's been mostly fun 20-30somethings. As with all things though there's always a few duff cases.
