You actually hit the nail on the head as to WHY they can’t delay the games though. It’s too big, there’s too much riding on these games coming out on time. Anime, card games, merch, movies, etc.

It would be pretty much impossible to delay these games given the many moving parts of Pokemon franchise.

Treehouse. Honestly Masuda seemed pretty upset about having to do it. I’m sure some more clarification will be given in interviews. But yeah for now, at least when Pokemon Home first launches, you won’t be able to transfer Pokemon to Sword and Shield unless they’re in the Galar regional dex.
