It's not wasted potential. The reason this works as a one man project is because it's being done with minecraft models. The amount of rigging and quality checking is significantly lower because this video is made with such simple models. Anything else would have taken a whole team, unless you're Monty Oum, but even…

Simplicity, with complex characters you need much much time to reach an appealing level. I am not a Minecraft fan, but i find this really enjoyable. Also as an animator I can tell you there is a lot of work here.
