I would also point out that the older consoles generally do not look good on an LCD or plasma tv. CRT tv's had a lot of color bleed and game designers used that to mask large pixels and for color separations and shading. They will look pretty terrible on new tech tv's.

tldr on the above post - s-video is actually a better signal than composite, significantly so.

I would put an asterisk on that - from Component up to HDMI, it completely depends on the source signal. You can't really specifically rank them like that.
