That's actually exactly what they are going to do. Book 3 was simply too big to fit in 10 episodes so they'll split it into two seasons to give it 20 episodes instead.

In the books we learn that the closest town to the main night watch fort (where Jon & co are) is called mole town, and it's primary source of income seems to be a brothel.
The latter is probably true, in the books we get some vague descriptions of people that still leave their identity up for speculation, but in the show it would be hard to show anyone without also giving their identity away.
I think Varys mentioned last episode that the Summer Islands have a good of love, and my memory is hazy about some of the upcoming books but I seem to remember their version of "praying" was basically having sexytimes with anyone at hand.

Very minor book spoiler: In the book the assassin dude didn't kill the guards so Arya & co could escape. Instead she walked up to a guard at night and showed him a coin, and when he bent down to reach for it she shanked him in the face!
They just cannot afford to cast too many people for each season, so they try to juggle the storylines around a bit to make it fit better for the show.
I agree, on both points. I guess it would be hard to do the effect justice without it ending up just seeming really cheesy.
