Moist newer NAS devices are a bit more flexible about drive swapping and replacement.  Synology and QNAP are both great.  Drobo is good with regards to drive flexibility but I had issues with early versions of their products so I am a bit leery of them.

I do something kind of similar. I have an old desktop with mirrored drives in it that’s my home “server.” I use a scheduled task to run Microsoft’s SyncToy and back up everything to an external USB drive every night. Most of my photos are also in Google Photos, so I have three copies, one of them in the cloud.
