Health bars aren't needed mainly because as the fight goes on, the monster starts acting differently and showing signs of wear and tear, like armor breaking and extreme salivating. If you would've actually gotten into the meat of the game (assuming you didn't get to the hunts) you would feel very different. It's a fantastic and deep game.
