Use Reinhardt's charge move on bastion. Simple counter and very effective unless you are not on same level. Roadhog can hook Bastion out of turret mode as well.

Bastion is actually best countered with Reinhardt’s charge move or Roadhog’s hook. Both will knock Bastion out of turret mode. Should also point out that the bright blue spot on Bastion’s back, while he is in turret, mode is a crit spot.
