In my experience you have to do a double-dye henna to cover the gray. The insane mess and my innate laziness about that kind of stuff is what led me to finally grow it out, with much, much better results.

As others have said, I agree that bald/buzzed looks way better than a combover or fringey kind of hair style on men. Can be seriously sexy — as with women, it depends on confidence and the right cut. So go for it!

You may be lucky and get a streak, which IMO is even better. Keep an eye on them and see how it's going and you may end up with a signature look. I colored mine for awhile until they both reached critical mass and I got lazy, and let them out and it looks awesome.
