Gentrification itself - by definition - infers that a poorer class of individuals is being forced out of the area where they live. When the artist calls it a "physical façade of gentrification," he is saying that someone was displaced.

These sorters are used in a variety of applications. In addition to many wineries, Ocean Spray uses them to sort their cranberries. They get used to sort peanuts. Even FritoLay uses them to identify poor quality potato chips before they get bagged.
I applaud his efforts, but this guy just built a smaller version of what large scale bakeries do daily. Nothing new to see here, move along.
