The M by far has the best buffet. Of course, it’s miles south of the Strip, so not all that convenient to most Vegas visitors (I won’t stay on the Strip any more, since the gaming odds suck and I’ve been there enough that the novelty of the Strip has worn off).

Bellagio too. Its hard to go wrong with any of the higher end ones the only one I wouldn’t recommend is Cosmopolitan which seemed overly pretentious.
