Because money still equals power, and power is what you need to get things done. It’s a lot easier to kickstart any project you want if you can just tip a few hundred million of your own into it to get it started rather than spending time (which is likely the most precious thing to a person with that much money)

Most food companies like that aren’t aiming for the bottom, they’re usually working within the constraints of a price point while also having to consider preparation, storage, etc.
