@HeartBurnKid: Agent of R.O.A.C.H.: Honestly, I'm not a fan of putting it on top of the cooling rack. Many attempts at making good bacon on top of the rack have ended in heartbreak and anguish.

I've been roasting bacon in the oven for a few years. I love the crispiness and the non-shrinkage, and I like to keep the bacon fat around for useful applications, like salad dressing. But I could never get around the curling issue (one end of the bacon never cooks as much as the other end), until I had an epiphany…

@OptionalJoystick: Not that there's a date, per se, but when wait staff make less than minimum wage due to the fact that they're "tipped" employees, then tipping is less of a kind gesture to the wait staff, and more along the lines of: thanks, restaurant... now you don't have to pay your employee as much.
