Big fan of Focuswriter. Sounds silly, but to me, a fun feature is the sound effects you can add to your typing. For example, when I press a key, i get the sound of a typewriter striking the paper.

So... no more annoying Would you like to dial with Google Voice or Phone Number prompts when calling out? Just use the normal dialer for the phone, and Hangouts for Voice? Two separate apps?

I would trade water resistance for removable battery, because one of the big reasons for wanting a removable battery is to take it out if the phone gets wet. (The other is to pull it if the phone is locked, which happens far less frequently these days.)

Would love to see a test of otherwise identical cars with 4, 6, 8, and even 12 cylinder engines, all the same displacement and aspiration, for power, mileage, and usability.
