Soooo, if we’re going by overall demographics, to have the perfect “on screen representation of the target audience”, you’d have 14 whites, 2 blacks, 2 hispanics, and 1 asian. for every 20 characters, give or take.

I disagree - none of the options you mentioned have the show itself address Apu’s history. There’s another option in which the showrunners build an episode that functions as an apology for the worse aspects of Apu’s previous characterizations and reinvent the character so that he can function in 2018.
