Xbox only allows you to bank 36 months total on any one subscription. If you try and bank 3 years of gold, then one month of ultimate, the month may be rejected. You need to wait for their system to register that you have less than 36 months.

As long as your ultimate subscription has expired/lapsed, you can still stack up to 3 years of gold and then purchase a single month of ultimate about a month later, which will convert your banked 3 years into GPU. The issue with that is making multiplayer games takes a long time now. Making a single player game that also has a long tail multiplayer? Call of duty and Halo are about the only franchises left who even bother and both of them had issues due to how hard it is now.
