Even if you bring the guy down while the ball is in the air the official will not call it because officials make it a point to not call penalties that have no affect on the play unless it is a "safety concern" penalty.

The officials cannot call defensive holding once the pass is in the air, it is then deemed pass interference and a spot foul. This play was either pass interference or not.
