I don't fold the omelet at all, until sliding it out of the pan. That way, you can stuff in as many ingredients as you want. You can't tri-fold it very well that way though, but the crescent shaped ones are very easy to make.

Sure, here's a basic recipe that's very easy. Be warned though, it's a sweeter cobbler than one made with pie dough.
That shouldn't happen. The batter picks up the flavor of the peaches as it rises, then creates a top that has a cakier consistancy, but with enough sugar and butter to caramelize. The peaches underneath are still plenty gooey. I've only seen it work with peaches though. Other berries and fruits do seem to work…
An easier alternative to dough is to make a batter, put the peaches on top, and let the batter rise through the peaches and caramelize on top. After all, it's a cobbler, not a pie.
