SLDL is indeed targeting hamstrings, but the mechanism that works the back and traps is exactly the same as in deadlifts. The only difference is the extra range of motion in the SLDL.
You will plateau with any training regimine. That’s why you have to mix it up. I can’t imagine making any gains by quitting early in my sets, though. Lower back, traps, erectors all get hit with straight leg dead lift. But you should be doing shrugs for traps regardless of your choice of leg exercises.
