I would have to say braking. Honestly, if you mess up your braking, you mess up your diving line. You really have to know when to brake, when to release the brake, etc.

After much discussion about this video over on Jalopnik, we all came to the conclusion that the motorcyclist did break check the car at first, but then the car rammed into the motorcyclist at the end. You can see the car speed up and pull up alongside the motorcyclist, and then rear-end him.
I have always loved the Gran Turismo.
Definitely the latter.
