Mediocre series ? I didn't know a mediocre series can be a primary source of profit for a game company. RE and SF are Capcom's primary series these days to make enough money (R.I.P Megaman and BoF). Can hardly say both are mediocre.
Aside from nostalgic reason, REmake was shown the pinnacle of graphic and ambient sounds can really built eerie atmosphere that a horror game needs. I understand that RE need some form of action since it is about biological threats. That's why Outbreak section can fill the need. Imagine if it remade with major scale…
Currently I bought and play RE HD Remaster and I must say the game still holding the candle very well after so many years. The pace, feels, action ... Made me glad I was following RE religiously since 90s. I hope RE 7 will take cues from RE HD sales record. People wants horror. Not bullet-fest.
BioHazard series has reach its peak. They need to retelling the series with modern approach. But it need to stay on biological weapon/warfare. Also, Online game. They need to retry making BioHazard Online that not emphasize in shooting-fest only.

For me, Parry system eliminates chances to get cornered or getting shower of fireballs / repeated attacks. It kinda cool too, because it took guts to do one. Alpha counter in SFAlpha was also cool stuff.
Most considered, definitely. But I'm afraid not most popular, especially on mainstream scene. Kinda like FF VII and any other good other Final Fantasy games. I mean, it's all good, but FF VII has the most popular fanfare treatment.
Probably because SF II has been with us for so many years before the arrival of SF III, the characters has grown on people. Seeing new ones seems weird at first. I mean, Necro for me at first looks like pale version of Dhalsim lol
