I'm po', so 80-85% is usually in my price range. I add a little kosher salt and fresh ground pepper into the meat, mix it, then press out my patties. Lay them on wax paper, freeze em, and then wrap em in foil. I cook them in my preheated L10sk3 with a LGP3 to cook from both sides, and I'm in heaven.

A pink hamburger patty? Many moons. They are normally cooked medium well(I used to prefer bloody, but now a burger that is cold in the middle turns me off), so they usually have a grayish tint to them.

Reminds me of my Dad's trip to visit his relatives in Italy in the 60's-70's. In America, polenta is usually served on holidays, and he considered it a "special occasion" food. In Italy, they ate it with almost every meal, because, well, they were "poorer" in Italy than he was in America.

I made friends with the butchers when I worked in a supermarket, who would hand trim the beef, so I knew a lot of what would go into the ground beef. I still make my own patties with a press and 80-85% ground.
