Make sure you use the audio cues to time your deflection. I find that works better than visual cues.

Considering that stealth is how I go into any combat situation, its pretty much the only thing I wear.

Oh they go down quick when you use the Master sword. the only real trick I find is making sure to get on the rotating ring under the head so that he moves you out of his sight himself so you can focus on cutting him down.
