I'm going to play Devil's advocate here. Don't kill me for this, but I'd like to raise a few points (none of which mean that I fully back this guy's suit):

For me, it's like songs. I can love a song, but eventually, if it's overdone, I get a bit tired of it.

1. Their emphasis on story and character development first over visuals
2. Stories that aren't tied into real world passing pop culture fads, more timeless themes
3. Humor that isn't tied too closely to passing pop culture fads and references
4. Creative minds ALSO the ones in charge of the studio (at least

The games are mindless fun. They're cheap and give you a what if breakdown of watching different bullets effect the human body. Seeing the anatomy and watching what a bullet does to someone's inside, as realistic as it can get, is pretty entertaining. It's gruesome sure, but it's supposed to be. Violence isn't pretty.
