I agree. I actually haven't gotten around to reading the manga, having been introduced to the series through the TV show.

I guess. The whole thing is basically one tragedy after another. That said, the despair is often overshadowed by the violence, and the anime series ends on a...well, not an upbeat note, exactly, but at least a less depressing one?

As others have said, Cowboy Bebop is just about perfect.
"Perfect" is a tricky term, though. I prefer to think of "perfect in terms of what it's trying to do" instead of trying to hold it up to some objective ideal of perfection.
By those criteria, Steins;Gate is pretty close to perfect. Now and Then, Here and There…

Supposedly, the differences are mostly cosmetic: better water, smoke, foliage, lighting, etc. I wouldn't expect significant gameplay differences between the different versions.
It's always nice when art directors draw on inspirations other than the standard ones (realism, Blade Runner, Alien, etc.) In this case, the use of the impressionistic color palette and almost...hazy, gauze-filter look really sells it as being a different time and place.
