There's a simpler rule of thumb:
If the country of origin has an 'e' in the name, (America, Ireland,) the liquor does too: whiskey.
If the country of origin does NOT have an 'e' in the name, (Japan, Scotland,) then the liquor is spelled without the 'e': whisky.
As I'm a fan of whisky in general, I've become used to seeing it spelled both ways and so I didn't notice, but, you're right. As this is an article about Scotch, they absolutely should drop the 'e'
