Majoras Mask remake or maybe make another similarly dark Zelda game. Also I'd like to see a Mario kart that pokes fun at racing sim-games like forza or GT. Imagine buying a used kart, modifying it, painting it, then take it to more traditional style. Have telemetry and other technical stuff in there for laughs.

Seeing that this game actually has no wheel support it actually handles very well with a keyboard. But of course 360 controller is where its at.

I bought this game the first day it was available for pre-purchase and man is it a neat game. It just needs full mod support to hurry up and get here. The tech demo was waaay better with mods.
