Agreed, I do this to get them loose if I don't want to cut near whatever's tied, but this definitely bends the plastic that locks it in place making it much more flexible. I wouldn't reuse them, personally, as they're pennies apiece.

Agreed, I have Shun's classic 10" chef, as well as their paring knife and sushi knife (a remarkably versatile blade). Those are the only knives I need, and 90% of my cutting is still done with the chef's knife, which is so sharp I can do paring work with it if my wife is using the smaller knives. Good stuff.
