In my opinion, the triangle fold is great for dumplings you plan on pan frying because the increase in flat surface area really helps you to get a good, crusty bottom.

Gotcha. I’d love to hear how the next one comes out if you do end up trying it.

I think where you use the words “impact texture” I would use the word “overcooked.” Just because it can’t rise above a particular temperature doesn’t mean that over exposure to temperature won’t affect the quality of the final product by giving an unpleasant texture, flavor, or dryness. No matter what the medium, I

When you butchered the bird, why did you think it would take the same amount of time at 150 degrees, given the fact you exposed more surface area? I think it came out worse the second time because you overcooked the bird. Just because you have a constant temperature in the water doesn’t mean that you can’t overcook

I suggested this last time but I really want do find out about long-cook beef & veal stocks.

What about something like stocks? I’ll do chicken stock at home because it only takes a couple hours of cooking, but, for something like a proper beef or a veal stock with good extraction, it can take hours. I’ve wondered if sous vide could be a hack for this. If it is, it can open the door to things like

Lemon juice and salting your veggies properly offers a similar effect, but won’t burn like the mustard grains will if you’re roasting veggies at a high heat (which you should be).

I admit to not watching the video because that’s something I just don’t need to hear. But he knows he’s being recorded and still doing this shit, and the doesn’t do anything about the recording?

Legal question for anyone who might be educated in such matters...

It’s my understanding that California is a “two-party consent state” when it comes to audio recordings. I would assume that this recording was made without McDondald’s knowledge, so how can it be used in legal proceedings?

I believe you have that backwards. Those states you listed are states that do NOT have the public policy exception. Most states do have that exception, but those are treated as exceptions to a general policy of “at-will” employment. There is no state where you can fire someone for any reason, with no exception.

Which 8 states are you referring to?

Every state in the US has at-will employment, although some states recognize more exemptions than others and some limited circumstance implied contracts. Also, some non-union government employees are exceptions to this rule. The only time your employment is not “at-will” is if you are working under a contract,

Unfortunately, you don’t have to justify a firing in the U.S. because every state has at-will employment. Legally, you can fire someone because they had a sandwich for lunch. It’s up to the fired person to show that they were fired for their race, or that they were fired for being part of another protected class.

Even a long time ago, in a galaxy far, far away, the universe could not find a single fuck to give about fairness.

Yeah, you really need your flannel sheets between you and the denim blanket to make that situation work.

He’s Canadian. Give him a shot of Maple Syrup, some Crown Royal, and a denim blanket and he’ll be fine in the morning.

The article actually says you should use either Yukon golds OR russets, but not reds.

You won’t get enough credit for this, but this is good. This is very good.
