Purely anecdotal, but the worst bugs I've run into both dealt with quests. The first is in the dungeon Banished Cells, where the quest giver decides not to follow you and progress the quest. The fix took about 20 seconds, and it didn't give us anymore problems.
Believe me, I want to love this game, so does my wife. We played every night for 2 solid weeks upon release, but there was one sequence that finally did it in for both of us.
