My feeling is all the good foods are too time intensive. So while I love brisket, its not something that you get everyday. Once the Sedars are over and reality has set in, the same effort isn't used and the food sucks.

Brisket doesn't really require anything thats banned. Potato Koogle kicks ass if its done in a cast iron skillet. However these things take time, and you can't eat anything with yeast in it. So bye bye Beer, Vodka, Bread (of any kinda) almost all breakfast foods. It sucks.

Anyone who thinks passover food is great has only been to a sedar and then gotten to eat real food the other 7 days. Passover food is generally awful stuff, the desserts are generally the worst part.
