Mainly its about the challenge, its A LOT harder than it looks crawling even with a spotter and a buggy and for the most part when you see guys crawling over some rocks thats not the only type of thing that you do on a wheeling trip, theres usually hill climbing , mud bogs, technical trails, water crossings...

I dont know about a lot of the country but in New England, more specifically MA, CT, and RI the only real legal Off Roading that you can do is on private land , and the best way to gain access legally is through any one of the number of 4WD clubs in the area. I will third this and say even though I know there are other capable Off-Roaders out there I will never have any truck other than an jeep , more specifically an XJ. Unless they, or I make a version of the FC concept.
