I recommend to get the chips crisp. You will add the eggs with the chips and onion already in the pan, just like any regular scrambled eggs with something added.

“Migas con huevo”: cut tortilla in chip size. Fry chips, remove excess oil, add onion, fry unitil onion is soft. Add egg and scramble. Add salt and pepper. Enjoy.
