Depends whether you're trying to shoehorn it in, or will widen/lengthen the chassis to suit. I met one guy locally that built a chassis, then decided to use a Mustang 302 as a donor, and then chopped his frame apart and added 4" in width. Not the recommended way to do things, I'm sure, but it worked.
Ideally I'd be using a Honda ST1300 or Yamaha FJR1300, but budget tells me I'll likely be going with a Kawasaki ZG1000 Concours. Can't argue with 997ccs, 10500 rpm, and a 20-year production run worth of potential donors and parts. Colour me skeptical, but there's probably a reason no tilting vehicles ever make it…
I hope you check out locostusa.com - there's lots of excellent information and even better people on there. Truly a wealth of info for building anything yourself, but most especially if it's a 7 clone.

This won out over building a Locost-style 7, although so far all I've done is order plans. Still, the fact that I can start with a working vehicle (the motorcycle) and add on to it (only one axle to design suspension for) should give me the best shot at completion.

I was wondering about the tires too. First set was obviously a set of custom-cut wide rears, but those got swapped out pretty quickly for what look like off-the-rack winter tires. I'm wondering if the custom tread cuts weren't enough to make up for the compound differences.
Easy: Bigger is better. "No replacement for displacement" falls under that too. Small, light, moderately-powered vehicles can be just as fun (if not more) and just as fast.
My guess is more, only because they'll be sold off to benefit a charity.
I go to make that joke with my kids, but each and every time I hold back, knowing that they'll just look at me blankly and say "...what?!?". I guess I just need to sit my kids down in front of YouTube and educate them.
