You forgot thermal block machines. I use a Pasquini Livietta which uses dual thermal blocks rather than a boiler. While the temp can fluctuate, it is a convenient alternative to waiting 30 minutes for a dual boiler to stabilize, and is lower cost.

Milk drinks are for breakfast, mainly macchiatos and cappuccinos. They are really quite tasty, as the milk is a compliment, rather than trying to mask anything. After 11am, plain espresso only.
