it helps create a more dynamic photo. If your subject is right in the center the image is flat and your eye sticks to the subject. With the subject slightly off-center (on one of the 3rds) your eye will bounce around more and look at the whole frame.
......which would likely result in burnouts 1000% of the time as the tires couldn't find enough grip to put the power down....
