That’s called turbo lag. It’s gotten a lot better over the years, but pretty much impossible to get rid of entirely. It’s not a full second, it’s probably barely half. Wish I could give you more stars. I had a ‘10 3.8 Track and it was a lot of fun. No it wasn’t as fast in a straight line as a Mustang GT and no it didn’t handle quite as well as a BRZ/FR-S, but it was a fun car and actually made a pretty good daily driver. Interesting take on the Fiata. It’s funny because I watched Jason Cammisa’s review of the 124 Spider just this morning, and he felt almost exactly the opposite of you - he didn’t like the styling as much as the Miata, and he felt that the suspension tuning was much better on the Fiat for backroads driving.
I worked for Ford Racing (as an engineer) for a little while, and the amount of effort and work that went into the builds for the Pirelli World Challenge cars and the Cobra Jet cars was incredible. And it was always function over form.
