Nut milks in cereal works fine (I didn’t think I’d like it, but I do). But you’re right that nut milks in coffee are pretty useless. ‘Non-dairy creamer’ isn’t great but creates a better ‘creamy’ effect than nut milk. 

I use coconut or almond milk in my cereal and I’m happy with it. I certainly have nothing against milk and I do miss it at times, but b/c of the sugar content I can’t have it.

Yeah but EVERYONE wants the bulkhead, so it’s tough to get. I worked for an airline while in college, and being a tall person myself, I’d save the bulkhead seats until a polite, extra tall person would check in, I’d give bulkheads to those people b/c if you’re like 6'4 and above, regular seats are awful.

It’s understandable for chefs to have a limit to what lengths they’re willing to go to accommodate. I’m sure most are willing to do simple substitutions/alterations that don’t completely disrupt their processes.
