I would recommend Twilight Imperium as the ultimate all day game.  Lots of fun trading, high stakes conflict, plays 6 people.  My first game with all new people and 6 people took 12 hours, but since then we’ve kept it under 10.  And it never feels long cause of the structure.

Could you do Pandemic’s deal with the Outbreak cards and make 5 piles of the event deck, and shuffle one card in each, then stack them up?  So you know the game will run most of the way through the deck but not know the exact timing?
