Alt meat sausages are easy because of the amount of seasoning that goes into sausage anyway, and texture that is easier to mimic. The Impossible and Beyond sausages were their best tasting stuff. The burgers were much easier to tell they weren’t real meat.

The simple Taiwanese way of stir fry over high heat (so you get some char) with garlic and some simple spices, is so easy and turns out so good.
