I would say because for most uses, the picture would be really tall, making it difficult to view without constant zooming/panning. A PDF that you can scroll through page by page is probably easier for anything you need where you’re capturing multiple pages.

That’s fair. If you can hit 90+ WPM without error, it shouldn’t matter what method you’re using. In my limited experience, I’ve never seen or heard of anyone typing at those speeds without doing some sort of home row touch typing.
