That was my impression as well: they simply organized the story thematically rather than chronologically, and they counted on the viewer to eventually catch on while giving you enough of each character’s backstory to make complete sense of their present circumstances. Read more
I also intend to start playing Witcher 3 because of this series. I absolutely loved it, and I thought the time skips were a neat way to show 3 stories and then have them all intersect at the end.

It definitely could be added. Wikipedia says it was released as an on-demand DVD in 2011, so it stands to reason it’d be up for release on streaming sometime in the future.
To me, A & B, absent any other warning signs, wouldn’t be a big deal. Like you said, a new restaurant failing to gauge just how busy they are going to be AND being reluctant to overbuy at the risk of tossing food is not the end of the world.
