Echoing my response to DadWagonDriver, I’d really suggest folks take a look at thefreshloaf.com, King Arthur Flour’s blog/recipes, and anything by Peter Reinhart. It was really the combination of those that elevated my bread baking beyond what my mom taught me.

I think this still only pertains to relatively low hydration loaves, however. Some of my higher hydration loaves (65-70%) made great sandwich breads and were WAY more “limp” during kneading than this article suggests.

King Arthur is spectacular, but I also love the guides/lessons/community over at The Fresh Loaf.

Agreed on the tape and gauze. I’d suggest athletic tape over medical tape, though; it’s much more resistant to abraisions.
