this is my experience with most of the “food festivals”. It’s some business asshole who sells $20 tickets, brings in food trucks at no cost to him, sets up some picnic tables and takes $15 per ticket in profit.

Its purely a matter of supply and demand. It can be done, but it costs money to have the right staff, equipment, ingredients, and proper setup for flow of patrons. Miss out on any one of these elements, and you’re going to end up with angry customers.
